DEFINITELY NOT PEANUT BUTTER AND JELLY

We need your help with ideas for brown bag lunches to take to work.  Here are some of our ideas and ideas from other websites.

  • Carrot Salad - Peal and grate a carrot.  Add juice from a fresh squeezed lemon and pepper.  Pop it into a container.  (Can be made the night before)
  • Zucchini Salad - Slice rounds of zucchini very thinly with a mandolin.  Sprinkle with juice of fresh lemon, fresh mint, and pepper. (Can be made the night before.)
  • Tortellini Salad - Boil up some tortellini and place in a bowl.  Add arugula pesto (arugula, parsley, crushed garlic, pine or walnuts, pepper, olive oil ground in a small processor.) cooked chicken, chopped sun dried tomatoes, sliced red pepper, Parmesan, or any other thing that suits your fancy.
  • Chicken and White Bean Salad - Rinse a can of white beans and combine it with chopped red onion or scallion, green pepper, carrot, tomato, red pepper, celery is optional, chicken, garlic oil, lemon juice, ground pepper, parsley, and fresh herbs.
